Yvecourt - Cuvée du Fondateur
Aged in oak barrels

La Cuvée du Fondateur – a homage to Aristide Mau, who founded Maison Mau in 1897.
Vinification / Aging
The grapes are picked when perfectly ripe, then de-stemmed (separated from the stems) and lightly crushed. Maceration is carried out in different vats in temperature-controlled conditions that are adapted to the type of grape. Maceration lasts between 15 days and 3 weeks. The running-off is decided upon after inspection tasting, when a gustatory balance has been reached.
Aging in oak barrels for 6 to 12 months.
Tasting notes
This wine boasts a raspberry colour and a delicate, powerful bouquet that pairs black berries with toasted aromas (toasted bread and coffee). Beautifully harmonious on the palate! A fresh hint of berry underscored by delicate oak notes.
